Nov. Meal Plan Week 1

November Meal Planning Week 1
With the holidays coming up, you are going to see a lot of sales for turkey, pork, and ham, so take advantage of the deals and work your meals around them!

Breakfast..........................  Lunch................................. Dinner............................... Snack

M  Over night Oatmeal / Tortellini salad /  Cauliflower Crust Pizza/ Chocolate peanut butter covered Banana slices

T  Egg in a basket/left over Pizza / Turkey burgers that taste like a turkey dinner (add cranberry, stuffing, and gravy) served with mashed sweet potatoes and marshmallows, and broccoli/ String cheese and sliced pear

W  Smoothie/ left over Burgers (just do cheese and ketchup for a typical burger) / Turkey and Black Bean Chili with Corn Bread/Applesauce 

Th Cereal/ Left over Chili on a baked  potato/ Ham w/ Augratin Potatoes and Breaded Carrots/ Celery and Hummus

F Toast w/Cream Cheese and Strawberries/Mac and Cheese with Broccoli/Ham and Cheese Sliders served with French fries and Beets/ 1/2 Grapefruit w/Honey

S Pumpkin Cinamon Rolls/ Lentil Soup and home made Bread/ Yogurt and Granola

U Breakfast with Nana/ left over Ham Sandwiches/ Pumpkin seeds


Recipes

Tortellini Salad

INGREDIENTS:
19 oz fresh or frozen cheese tortellini
1 ear fresh sweet corn, charred and kernels removed from cob
1 (15 oz) can black beans, rinsed and drained
1 1/2 cups grape tomatoes, halved
2 ripe avocados, chopped


Dressing:
1 small clove garlic, minced
2 Tbs olive oil
Juice of 1 large lime
1/3 cup cider vinegar
Salt and black pepper, to taste


Cauliflower Crust Pizza

INGREDIENTS:

1 cup riced, then cooked cauliflower
1/2 cup shredded mozzarella cheese
1/2 cup grated parmesan cheese
1 egg, beaten
1 tsp italian seasonings
1/2 tsp crushed garlic
1/2 tsp salt
pizza sauce & toppings of your choice
Turkey Burgers 

INGREDIENTS
1 lb. ground turkey
bread crumbs
1 egg
red onion chopped
garlic minced
fresh parsley chopped
onion salt
pepper

Mix all together, form the patties and grill or pan fry.


Turkey and Black Bean Chili

INGREDIENTS
1 yellow onion, diced
2 cloves garlic, minced
1.5 lb. ground turkey
1 can tomatoes, diced
3 tsp. chili powder
2 tsp. cumin
2 tsp. coriander 
½ tsp. smoked paprika
1.5 cups corn kernels (I use frozen, but canned is fine too)
1.5 cups black beans, drained (cook them yourself or use canned)
½ cup shredded cheddar cheese, for garnish
½ cup plain greek yogurt, for garnish
salt and pepper to taste

Throw it all into a crock pot in the morning, and let cook on low all day.


Ham and Cheese Sliders 

INGREDIENTS
Ham
Cheddar Cheese
Hawaiian Rolls 
 Mustered
Worcestershire
Onions

Make the sandwiches with ham and cheese, and put them in a dish. In a bowl mix the worcestershire, mustered, onions, and pour or brush over the tops of the sliders. Bake till they are browned and toasty. 

Pumpkin Cinnamon Rolls

INGREDIENTS
  For Dough
1-1/2 cup Whole Milk
1/2 cup Coconut Oil
1/2 cup Sugar
1 package (2 1/4 Teaspoons) Active Dry Yeast
1 cup Pumpkin Puree
4 cups All-purpose Flour
1/2 teaspoon Ground Cinnamon
1/4 teaspoon Ground Nutmeg
1/4 teaspoon Ground Ginger
1/2 cup (additional) All-purpose Flour
1/2 teaspoon Baking Soda
1/2 teaspoon (heaping) Baking Powder
1/2 teaspoon Salt

 For Filling
1 stick 1/2 Cup Butter, Melted
1/2 cup Sugar
1/2 cup Brown Sugar
1/2 teaspoon Cinnamon
1/4 teaspoon Ground Nutmeg
1/2 teaspoon Ground Ginger
1 cup Finely Chopped Pecans

For Frosting (if you want to do frosting)
8 ounces, weight Cream Cheese, Softened
1/2 pound Powdered Sugar
1/4 cup Whole Milk
2 Tablespoons Butter, Melted
 Dash Of Salt

Lentil Soup 

INGREDIENTS
Ham
Ham bone
1 bag Lentils (soak them the night before in chicken broth and salt)
1 28oz can crushed tomatoes
3 cloves garlic
1 large yellow onion
Chicken broth
salt to taste

Put in the crock pot in the morning, and let it cook all day.
