Nov. Meal Plan Week 2

November Meal Planning Week 2
I hope you all are not turkey-ed out yet lol... this week we are eating turkey all different ways, along with more ham!
Turkey and chicken can be pretty interchangeable, so if you are unable to get turkey yet, or it hasn't gone on sale as of yet, pick up a whole chicken.

M   Oatmeal /  Tuna Sandwich / White Bean and Avocado baked Burrito/ Yogurt and Raspberries


T  Sunny Side Egg on Toast/left over Burrito / Turkey dinner w/ Garlic Mashed Potatoes, Green Bean Casserole, and Stuffing/  Pumpkin Chips w/ Fall Harvest Salsa (I bought these at Trader Joe's)


W  Smoothie/ Turkey Club Sandwich / Turkey Pot Pie (potato, carrots, celery and peas)/ Mandarin Orange and String Cheese


Th Cereal/ Left over Pot Pie/ Turkey Noodle Soup and Homemade Bread/ Chocolate Peanut Butter and Apple Slices


F Waffle with Cinnamon Sugar and 1/2 Banana/1/2 Grilled Cheese and leftover Soup/Ham Casserole/ Whole Wheat Crackers and Cheese


S Corn Bread Pancakes/ Ham Quiche/ Popcorn

White Bean and Avocado baked Burrito

INGREDIENTS:
  • 1½ cups brown rice (cooked)
  • 1½ cups corn
  • 3 heaping cups white beans

  • 3 avocados
  • 1-2 jalapeno peppers (unless you don't want it to be spicy)

  • Olive oil for sauteing
  • 5 cloves garlic, diced
  • 1½ cups white onion, chopped (2 medium)
  • 1 red pepper, 1 yellow pepper, 1 green pepper

  • 1 tsp cumin
  • 1 sprig fresh cilantro, chopped
  • ½ cup tomato sauce
  • Sea Salt and Pepper
  • Whole wheat tortillas

Serve with
salsa, sour cream, or Greek yogurt.

In a wok or large fry pan heat olive oil, saute onions, peppers, and garlic. Once that starts to brown stir in the corn, beans, and rice. Season with cumin, cilantro, salt and pepper. Next mix in the tomato sauce, let simmer for a few minutes and then remove from heat. Fill the tortillas and add to the filling your avocados and jalapeno. Place in a glass dish, and cook in the oven until the tortillas are crispy. 



Green Bean Casserole

INGREDIENTS:

BAKED "FRIED" ONIONS

  • 1 large onion
  • 1/2 cup all-purpose flour
  • 3/4 cup Panko 
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 large egg
  • 1 Tablespoon milk

GREEN BEAN CASSEROLE

  • 1 Tablespoon + 1 teaspoon salt, divided
  • 1 pound fresh green beans, rinsed, trimmed and halved
  • 2 Tablespoons unsalted butter
  • 8 ounces mushrooms, sliced into halves or quarters
  • 1/2 teaspoon ground black pepper
  • 2 cloves garlic, minced
  • 2 Tablespoons all-purpose flour
  • 3/4 cup chicken broth
  • 1 and 1/4 cups  half-and-half

Turkey Club Sandwich

INGREDIENTS

Turkey
Bacon
Lettuce
Tomato
Mayo
Whole Wheat Bread

You take a slice of toasted bread and place your cooked bacon and turkey on it, then you mayo another slice of bread and put it on top like a regular sandwich. Next you layer on top lettuce and tomato, add another mayo-ed slice of toast. put four long toothpicks in if you have them (this will help keep your sandwich together) then cut in the form of an X. This will give you four even triangle shaped pieces. Serve with a pickle spear and yum!

Turkey Pot Pie

INGREDIENTS

Turkey
Potatoes (diced)
Carrots (chopped)
Celery (chopped)
Peas
Pie Crust (homemade or store bought)
Salt
Pepper
Garlic 
Onions (chopped)
Broth

On the stove steam or boil vegetables and potatoes. Don't throw the water away add turkey, salt, pepper, onions, and garlic to the water, to make a broth. Put all the vegetables into the crust in your pie pan, add the turkey, and pour some of the broth over the top, don't soak it. Bake till the crust is golden brown. 



Turkey Noodle Soup 

INGREDIENTS

Turkey
Turkey Bone
Carrots
Celery
Onion
Garlic
Noodles
Salt
Thyme
Oregano
Pepper

In a crock pot. but all of  these ingredients in (except the noodles), fill it up with water, and start cooking in the morning, and just let this cook all day adjusting the seasoning as needed. In a pot on the stove boil water and cook the pasta add before serving. 

Ham Casserole

INGREDIENTS
4 ounces pasta
1 tablespoon olive oil
2 cups chopped cooked ham
1 green bell pepper, seeded and chopped
1/4 cup chopped onion
1 clove garlic
1/4 cup broccoli (steamed)
1/4 cup spinach
1 (10-3/4-ounce) can cream of mushroom soup, undiluted
1/2 cup (2 ounces) shredded Cheddar cheese

Saute onions, pepper,broccoli, spinach, and garlic with olive oil, once browned add soup. In a pot boil noodles. Once the soup is hot, stir in cheese till melted. Add ham and noodles, pour into a casserole dish and bake till the top crisps up.


Corn Bread Pancakes

1 cup  all-purpose/plain flour
1 cup fine cornmeal
4 tablespoons granulated sugar
1 tablespoon baking powder
¼ teaspoon salt
2 eggs, beaten
1⅓ cups milk
½ stick salted butter, melted
2 tablespoons coconut oil

Ham Quiche

INGREDIENTS

unbaked 9-inch deep-dish pie shell (store bought or homemade)
1 cup (4 oz.) shredded Swiss cheese (or any cheese, cheddar, pepper jack, parmesan)
1 cup finely chopped, cooked ham
2 onions, sliced
1 1/2 C milk
3 large eggs
1/4 cup all-purpose flour
1/4 teaspoon salt
1/8 teaspoon ground black pepper

Vegetables you can add spinach, broccoli, or mushrooms!
