October Meal Planning Week 4
Ahh.... I missed a few days of this week, sorry. I say better late than never so here is the last week of October for you.

An apple a day... (I think this menu accomplishes that)

M  Over night Apple Cinnamon Oatmeal / Salmon Salad  Sandwich (taste almost the same as tuna, but is a better choice than tuna)/ Mushroom burgers and home made Root Vegetable Fries / String cheese and a Tangerine 
                                                                                  
T  Spinach, Feta, Omelet / Left over Burger or Salmon / Sausage, Onions, Cabbage, on a Roll/ Apple Chips

W  Smoothie/ Quinoa Salad / Potato and Cauliflower Soup/ Tortilla Chips and Salsa (or homemade guacamole) 

Th Cereal/ Leftover soup/  Stuffed Pork and Broccoli, Cheddar, Baked Potato/ Trail Mix

F  Waffle with Chocolate Peanut Butter, and 1/2 banana/ Mac and Cheese/ Pork "Ruben" Sandwich w/ Grapefruit Spinach Salad/ Yogurt and Whole Wheat Graham Crackers

S Pumpkin Bread/ Whole Chicken w/ Corn Bread Stuffing and Mashed Sweet Potato/ "Pumpkin walked into a bar" (I get these different flavored bars at Trader Joe's)

U Breakfast with Nana/ Chicken Sandwich w/ stuffing and gravy on the bread (all left overs from last nights dinner/  Celery and Cream Cheese


Recipes

Salmon Salad

1 can salmon (the can was like the size of two tuna cans, and make sure it says wild caught)
 diced celery (as much as you like, I do like 2-3 stalks)
mayo (I do about a Tbs, but you can do more if you like)

Mix it all together, and I put it on whole grain bread with fresh spinach and tomato.

Mushroom Burgers

INGREDIENTS
2 cups portabella mushrooms, cubed (smaller pieces); gills removed
2 cups cooked black beans, rinsed and divided
1 cup minced broccoli, fresh only
1/2 cup red onion, minced
3 XL eggs, beaten
1/2 cup plus 2 Tbl Panko 
1 Tbl Montreal Steak Seasoning
1 Tbl Worcestershire 
2 Tbl minced garlic
3/4 cup fresh grated Parmesan 
Olive oil

Root Vegetable Fries
(you can do all or which ever ones you want)

INGREDIENTS
Sweet Potato
Parsnips
White Potato
Beets
Olive Oil
Salt

skin, slice into fries, lay on a cookie sheet, drizzle with olive oil, and sprinkle with salt.

Sausage, Onions, Cabbage, on a Roll
Ingredients
2 pounds fully cooked polska kielbasa, cut in half lengthwise, then cut into 2 inch pieces (I am just using Italian sausage, because that's what is on sale)
1 tablespoon extra virgin olive oil
1 head cabbage, coarsely chopped
1 large sweet onion, cut into large pieces
3 cloves garlic, minced
2 teaspoons sugar
1/2 teaspoon salt
1/2 teaspoon black pepper
2 teaspoons rice wine vinegar
1 1/2 teaspoons dijon or brown grainy mustard
whole wheat hot dog rolls

Quinoa Salad 
(you can really add any vegetables you like)

INGREDIENTS
Quinoa
Broth
Salt
Black Beans (rinsed)
Avocado (diced)
Corn
 Fresh Spinach (chopped)

Dressing
Olive Oil
Lemon or Lime juice
Cumin

Cook the quinoa in the broth and some salt. After it cools, mix in your other ingredients. Make your dressing separate and mix in.


Potato and Cauliflower Soup
I made a few edits to this recipe. 

INGREDIENTS
  • 2 lbs fresh cauliflower, roughly chopped
  • 2 lbs potato, peeled and cubed (can also do sweet potato)
  • 3-4 Italian sausage
  • 1 quart vegetable broth
  • 1 large onion, diced
  • 5 cloves garlic, peeled
  • 4 stalks of green onion, chopped
  • 1 tsp dried thyme
  • 1 tsp paprika
  • ¼ tsp salt, or to taste
  • 2 cups milk
2 oz cream cheese (or cheddar cheese)

Cook the sausage, onion, and garlic in a fry pan. Once cooked add broth and let simmer (this will give you a little bit more of the sausage flavor). Next put everything into your crock pot and let cook for hours!


Stuffed Pork Tenderloin

INGREDIENTS

Pork Tenderloin
1 lg Apple
1/2 C Apple Sauce
Sauerkraut 
Bread Crumbs
Bacon or turkey bacon optional

Glaze
Maple syrup
Mustard

Preheat oven to 350 F. Pound your pork out till it is nice and thin, but do not tear it. Next layer it with the bread crumbs, sauerkraut, apple sauce, and apple. Roll it up, at this point I wrapped mine in turkey bacon, but you can skip this if that is too much, or your not a bacon fan. Place in a dish, mix your syrup and mustered, and just brush it evenly over the outside. Now it is ready to cook.



Broccoli, Cheddar, Baked Potato
(other fun things to add to a baked potato, spinach, corn, or black beans)

INGREDIENTS 
Broccoli 
White Potato
Cheddar Cheese
Greek Yogurt
Garlic
Onion
Olive Oil
Salt

Bake the potatoes till a fork can easily puncture it. While they are baking steam your broccoli, and in a fry pan with some olive oil saute your onions and garlic. Once the potatoes are done, cut them in half, and scoop out the inside. Take the insides and put them into your pan with the garlic and onion. Mix in some greek yogurt and salt. Once you have gotten it to the right taste and texture, chop up your broccoli, and add mix it in as well. You will then take this mixture and put it back into the skins. Top with cheddar cheese and broil just till the cheese is melted. 

Pork "Ruben" Sandwich 

INGREDIENTS
Pork (normally made with corned beef)
Swiss Cheese
Sauerkraut 
Thousand Island Dressing
Rye Bread 

I marinated the pork with rosemary, garlic, and salt over night. Next day I cooked it and assembled the sandwiches.

Grapefruit Spinach Salad

INGREDIENTS

Grapefruit
Spinach
Apple
Slivered Almonds
Celery
Carrots

Dressing
2 Tbs Olive Oil
1/4 C Cider Vinegar
Strawberry Jelly (to taste, till its at the right sweetness for you)

Corn Bread Stuffing

INGREDIENTS
Corn Bread (I had some frozen in the freezer, if you don't have any handy, you can just use what you have)
Wheat Bread (also just happened to be what was in the freezer)
Apple
Celery
Walnuts
Dried Cranberries
Salt
Olive Oil

I just chopped everything up and mixed it all together, and stuffed it in and around my chicken.

Recipes

Pickle and Bologna

INGREDIENTS 
3-4 Sweet Gherkins
1 lb. Bologna
1/2 C Mayo (or to preference)

Mushroom Fajitas 

FOR THE MARINADE
1 tablespoons olive oil
Juice of 1/2 lime
1/2 garlic clove, minced
1/2 tablespoon chili powder
1/2 teaspoon sea salt
Dash teaspoon black pepper
2 large portabella mushroom caps, sliced thinly

FOR THE FAJITAS
4 whole wheat tortillas
1/2 tablespoon olive oil
1/2 large red bell pepper, sliced thinly
1/2 large yellow bell pepper, sliced thinly
1/2 large onion, sliced thinly
Salt and pepper, to taste
Toppings such as guacamole, salsa, chopped cilantro, lime wedges, black beans, cheese, sour cream, chopped onions, etc.


Panko Breaded Chicken Breast

INGREDIENTS
Chicken Breast (about 1 per person)
Panko or Japanese bread crumbs
seasonings
1 Egg 
Milk

Mix the milk and egg to make an egg wash, dip the chicken, then cover in bread crumbs. Cook in oven at 400 F till the chicken is crispy.


Peanut Sauce

INGREDIENTS
  • 1½ tbsp. peanut butter
  • 2 tbsp. honey
  • 2 tbsp. soy sauce
  • 1½ tbsp. rice vinegar
  • 1 garlic clove, minced
  • ½ tsp. grated fresh ginger root



Chicken Breasts with Hummus

INGREDIENTS 
Chicken 
Hummus (your choice of flavor)

Put chicken in baking dish, cover in hummus, and bake at 400 F for 40 min.

Delecata Squash and Onions

INGREDIENTS
Delecata Squash
Onions
Salt
Olive Oil

Cut squash down the center, clean out seeds and then make slices. Slice wedges of onion, and place both the onions and squash on a cookie sheet drizzle with olive oil and sprinkle with salt. Cook 350-400 F for around 40 min (depends on how thick you cut your squash, but you want it to be nice and soft)

Chicken Salad 
(I am using the left over hummus chicken to make this recipe)
   INGREDIENTS
  • ½ cup Greek yogurt
  • ½ cup plain hummus
  • 1 tablespoon fresh squeezed lemon juice
  • 3 cups cooked, chopped chicken (if you have less just make changes as needed)
  • ⅓ cup chopped celery
  • ⅓ cup chopped apple (I used Fuji apples)
  • 2 tablespoon toasted, sliced almonds
  • salt, pepper



Sausage and Apple Stuffed Acorn Squash


INGREDIENTS
2 large acorn squash, halved and seeded
2 Tbsp butter, melted
1 clove of garlic, pressed or minced
1/2 tsp ground sage, divided
3/4 lb Italian turkey sausage (or chicken, or beef, I'm going to buy what is on sale) casings removed
1/2 cup onion, finely chopped
1 celery rib, finely chopped
4 oz mushrooms, chopped (if you like mushroom or just leave it out)
1 apple, cored and chopped
1 cup panko crumbs
1/4 cup grated Parmesan cheese
salt and pepper
1 egg, beaten


Loaded Potato Casserole

INGREDIENTS
1 lb boneless chicken breasts, cubed
6-8 medium skin on red potatoes, cut in cubes
⅓ c olive oil
1 tsp salt
½ tsp black pepper
1 Tbsp paprika
2 Tbsp garlic powder
2 Tbsp hot sauce (Dash doesn't like spicy so this will be on the side for us)
2 c fiesta blend cheese
1 c crumbled bacon
1 c diced green onion



Pumpkin Waffles

INGREDIENTS 
2 large eggs
1-1/2 cups buttermilk (you can also use soured milk, or milk with a little vinegar)
1 stick unsalted butter, melted and cooled
1 tsp vanilla extract
1/2 cup pumpkin puree
1-3/4 cups all-purpose flour
2 tsp pumpkin pie spice
3 tbsp sugar
2 tsp baking powder
1 tsp baking soda
1 tsp salt

Butternut Squash Soup

INGREDIENTS

  • 2 cups vegetable stock
  • 2 cloves garlic, peeled and minced
  • 1 carrot, peeled and diced
  • 1 Granny Smith apple, cored and diced
  • 1 medium butternut squash, peeled, seeded, and diced (you can also interchange this with pumpkin if you don't have squash handy)
  • 1 sprig fresh sage
  • 1 white onion, diced
  • 1/2 teaspoon salt, or more to taste
  • 1/4 teaspoon freshly-ground black pepper, or more to taste
  • 1/8 teaspoon cayenne, or more to taste
  • pinch of ground cinnamon and nutmeg
  • 1/2 cup coconut milk

Ham and Cheese Roll Up
Use your favorite bread recipe, here is mine

After you have the dough made, but before you bake it...
Preheat oven to 350 F
Roll bread dough out on a large oiled or floured cutting board or clean counter.
Next spread mustard over the whole thing and then layer with shredded cheddar cheese and ham either shredded or cubed.
Finally roll your bread up just like you would cinnamon bread, and place in a loaf pan to bake for 25-30 min or until golden brown.

School Holiday: Christopher Columbus Day

Christopher Columbus Day (school is closed)

So whether you home-school or your children are in school, here are some ideas to make your day go by. When we have a day off I always seem to be scrambling for activities to keep Dash busy. I don't like tv on all day or video games to be played constantly, so I try and find ways to keep his mind interested and growing. Today we will be doing things based off of the life and experiences of Christopher Columbus!
Wake up 8-8:30am (sleeping in! If your kids let you, Dash is a pretty good sleeper)
Morning routine
I did some research on what people eat in Spain, and I have tried my best to replicate a menu based off of that.
Breakfast: Hot Chocolate (they drink coffee, but I'm thinking I don't need Dash that hyper lol) and toast (read about Amerigo Vespucci while eating)
Finish morning routine
Amerigo Vespucci was an explorer like Christopher Columbus write about a place you would like to explore, or a place you have explored (if your child hates to write or can not yet write, let them just tell you about it, and maybe you can share stories of you own adventures).
Make a map of a place you have been to, to show others what it looks like. (take out the markers, crayons, colored pencils, and plenty of paper, let them go to town. If they want to draw treasure maps, or other types of maps let them, the great thing about today is no rush to stay on schedule, or even on topic lol)
Lunch: Potato Pancake with sofrito sauce (allow your children to decorate their pancake like Christopher Columbus's face, or whatever they want to make, using the sauce)   http://spanishfood.about.com/od/tapas/r/tortilla.htm
Outdoor time (if whether is permitting enjoy a nice Autumn walk with your kids, maybe even head over to a park, or pull out the bikes)
Read a book about Christopher Columbus (you can either read aloud, or give the books to them to read or enjoy the pictures)
Do art collage project incorporating the three ships, Columbus, and the year 1492. (You can for idea one do this with construction paper,  have them, or yourself cut out the parts, and then paste it. Or for a second idea use  just coloring supplies and paper)
Snack: Fruit
Make cookies together as a treat for after dinner, using recipe below.
Free time (give yourself a break, and let them entertain themselves for a bit, maybe now let them watch tv or play video games)
Dinner: Black eyed peas and tomato sauce
