Let your kids really taste the rainbow

Rainbow menu and recipes



Red foods give you: Vitamin A, Vitamin C, Antioxidants and Potassium!
Breakfast Berry Bread (this is recipe is great for vegans or people with diabetes)

This is the bread but with only blueberries.









Ingredients

1 Tbs Apple Sauce
1 1/2 C Whole Wheat Flour
1 C Flour
1 C Berries (use raspberries and strawberries for the red color)
1/2 C chopped nuts (I use walnuts)
1 1/2 Tbs Honey
1/2 C Warm Water
1/2 tsp Salt
2 tsp Yeast

Directions

Pre-heat the oven to  350 F. Mix yeast and warm water together till it dissolves, then pour in the rest of the ingredients. Spray bread tin, fill, and then bake 20-30 minutes.


Lunch Baked Red Potato

Ingredients

Red Potato

Toppings

Shredded Cheese

Cooked chopped Broccoli

Sour Cream

Directions

Wash the potatoes then place enough potatoes on the oven for everyone to have two. Bake at 350 F until the inside is soft and can be easily poked with a fork. Take the potatoes out cut in half and cover in desired toppings.

Snack food: Red apple with peanut butter, Red Peppers and Hummus, Red Pear, Watermelon, Pomegranate, Blood Orange, Cherries, or Dried Cherries and nut trail mix

Orange foods give you: Vitamin A, Antioxidants and Fiber!

Breakfast Sweet Potato hash

Ingredients

6 Sweet potatoes (the sweet potatoes I get are on the small side if they seem big do less)

1/2  Onion

2 cloves Garlic

Olive oil

1 C Fresh Spinach

1 tsp Salt

Directions

Peel the sweet potatoes and cut into 2 inch cubes. Heat olive oil in a large fry pan. Dice one medium sized onion and crush the garlic. Once the pan is hot put the potatoes onion and garlic in. Chop the spinach. Once the potatoes start to brown add the spinach and sprinkle the salt on. Keep flipping the potatoes till all is browned.

Side dish Acorn Squash Fries

Ingredients

1 Acorn Squash

Salt

Olive Oil

Directions

Pre-heat oven to 350 F. Peal the acorn squash and slice into fry shapes. Coat in olive oil and sprinkle with salt. Bake till the squash is browned on all sides

If you are looking for an orange entree food, try Trader Joes Butternut Squash Soup or Pumpkin Soup I have not yet tried to make it so I can share a recipe but my whole family loves it.

Snacks: Orange, Sweet potato potato chips, Carrots and Ranch, Mango (dried or fresh) , Papaya (dried or fresh), Apricot (dried or fresh)   

Yellow foods give you: Vitamin A, Vitamin C, Calcium, and Potassium!

Breakfast Sunny Side Eggs

Directions

To make a sunny side egg you have to be careful when you crack the egg to not damage the yolk. Then all you do is cook it on one side. People often serve it with toast because it is very runny and you need something to soak up the yolk.

Lunch Peanut Butter and Banana Sandwich

Ingredients

Whole Wheat Bread
Banana
Peanut butter

Directions
Instead of traditional jelly try using a nutrient filled yellow food!

Snacks: Golden Raisin, Lemonade, Yellow Zucchini chips, Popcorn, Pineapples (dried or fresh), yellow peppers and hummus.

Green  foods give you: Vitamin A, Vitamin C, Vitamin E, Vitamin K, Fiber, Calcium, Omega 3 Fatty Acids, and Iron

Breakfast Spinach Omelet

Ingredients for 1 serving

1 Egg

1/4 cup Fresh Spinach

Feta (or really any cheese you enjoy)

1/4 tsp Garlic

Olive oil

Dash of Salt

Directions
Heat oil in frying pan. Add Spinach, garlic, and salt. Let this cook down. Crack egg into a mixing bowl and mix with a whisk. Next crumble in a little bit of cheese and pour over your spinach mixture in the pan.

A fun green lunch is dinosaur chicken nuggets (from Perdue) and steamed or raw broccoli. (if your ok with a little food play, sometimes the fun can help your child learn to love vegetables). The broccoli are trees and the dinosaurs are herbivores!

Snacks: Guacamole and chips, Kiwi, Green Peppers and Hummus, Celery with peanut butter or cream cheese, Green Apple with cheddar cheese, Pear, Honey Dew Melon, and Green Grapes.

Blue/ Purple foods give you: Antioxidants, Vitamin B, Vitamin C, Vitamin E and Fiber. 

Buttermilk Blueberry Pancakes

Ingredients

1 1/2 C Flour
2 tsp Baking Powder
1/2 tsp Salt
1 Egg
2 Tbs Butter
1 1/2 C Buttermilk
1/2 tsp Baking Soda
2 C Blueberries

Directions

Mix together flour, salt, baking powder, and soda. Add egg buttermilk and melted butter. Stir in Blueberries.

Blue tortilla Chicken Nachos

Here it is going into the oven.









Ingredients

1 Chicken Breast (this could also be done with chop meat but cook the chop meat with taco seasoning and cook in a fry pan)
1 bag Blue Corn Tortilla Chips
1 cup Shredded Cheddar Cheese
1 15oz can  Black Beans washed and drained
Sour Cream
1 clove Garlic
1/2 an Onion
Poultry seasons and salt
(I always do garlic salt, celery salt, onion powder, thyme, parsley, rosemary and a little cayenne pepper)

Pre-heat oven to 350 F. Boil your chicken in water and

spices with garlic and onion. Once the chicken is cooked fully all the way through, drain the water. With a fork shred the chicken and then mix with the beans. On a cookie sheet spread the bag of chips. Layer first with chicken and beans then cheese, and place in oven. Once the cheese is all melted take out, dollop with sour cream, and enjoy.

Blue/ Purple Snacks:  Blackberries, Blueberries, Grapes, Plums, Eggplant fries, Raisins, Blue Potato Potato Chips, Blue Corn Chips with salsa or other dips.
